Along with their beauty, they are also a particularly delicious variety with tender skins that virtually disappear when cooked, leaving a smooth, creamy texture perfect for soups, chilis, and other bean dishes. An heirloom originally from South America, this variety is said to be the same as Pepa de Zapallo. A versatile bean, they can be eaten as a snap bean, fresh shelling bean, or dried bean.
